Waking up and gazing through the window at Barcelona’s Gothic cathedral bathed in the sun’s first rays is one of the highlights of a stay at Hotel Colón. A rooftop pool is the perfect place for a cooling dip or cocktail on the panoramic terrace before heading to the hotel’s Cathedral restaurant to sample creative Catalan cuisine. After feasting on dishes like pa amb tomàquet (toasted bread rubbed with tomato, olive oil and garlic) and arròs a la cassola (local paella), retreat to one of the hotel’s 138 spacious guest rooms to sleep it off.
