From Mexico City to Mendoza, an exotic mix of influences, ingredients and traditions make these dishes and drinks as varied as the region itself — so come along and find out where to go and what to eat from the experts who know this mouth-watering cuisine inside out.

Martin Morales, restaurateur and author
Martin is the chef, restaurateur and founder of the London-based, Michelin Guide-listed Peruvian café-restaurants Ceviche, Andina, and Casa Andina. He's also the author of the bestselling cookbook Ceviche: Peruvian Kitchen and Andina:The Heart of Peruvian Food and hosts his own YouTube Channel, ‘Martin’s Peruvian Kitchen’.

Nori Jemil, travel photographer and writer
Within six months of a trip to Peru, Nori had packed up and moved to South America. From her base in Santiago, she took every opportunity to travel the length and breadth of Latin America, learning Spanish and eating some of the best food she's ever had. Now back in the UK, Nori returns whenever possible — for travel features, photography tours and the food.

Morales Alameh, sales consultant, Travelbag
Morales has been a travel expert with Travelbag for a number of years, but in her previous career as a flight attendant, she frequently travelled to — and fell in love with — South America. From the snow-capped peaks of Patagonia, to the carnivals in Brazil and the rich Amazon rainforest, she'll be offering her practical advice for travellers looking to make the most of a trip to the continent.

Russell Maddicks, travel writer
Russell has been adventuring through Latin America for the past 20 years on a quest to live like a local by mastering the lingo, sampling the strangest street snacks and seeking out the strongest homemade hooch. He is the author of Culture Smart! Guides to Cuba, Ecuador, Venezuela, Mexico, and Nicaragua and is currently researching and writing the Bradt Guide to Colombia.
