The making (or sourcing) of good-quality noodles is key to an authentic ramen.
Soy-marinated eggs are the perfect addition to ramen. To make them, boil small, chilled eggs for six minutes and 20 seconds exactly. Immediately cool in cold water, then peel and soak in a mixture of 150ml soy sauce and 50ml mirin for at least 30 minutes.
